We’d work long days, go to our internships in other kitchens and then meet for drinks out somewhere. After a long day on your feet, it’s no wonder espresso martinis are a go-to to get a night out started off right.

Ingredients

  • 4 tbsp freshly brewed espresso
  • 6 tbsp vodka
  • 6 tbsp Kahlua or Bailey’s
  • 4 tbsp cream de cacao
  • fresh ice
  • espresso beans for garnish

Instructions

  • Fill a jigger half way full with fresh ice. Pour each ingredient over top of ice. Tightly close the jigger and in an up and down motion, shake for 30 seconds.
  • Strain martini into chilled glass, and garnish with espresso beans.
  • Enjoy!

  • .25 cups cold liquid egg whites, or the whites from 2 eggs
  • 2 tbsp sugar
  • 2 tsp matcha powder
  • Milk, cold or steamed for serving

Instructions

  • In a medium mixing bowl, combine egg whites and sugar. Using a whisk, electric or by hand, whisk until the mixture has changed in texture into a light and foamy blend. About 3-5 minutes.
  • Whisk in the matcha blend, sifting it before if it is extra clumpy. Give it another minute or two to fluff up.
  • Carefully spoon matcha mixture over hot or cold milk. Enjoy!

A Few Tips:

For the Matcha:

Make sure to whip the egg whites before adding the matcha. I tested this mixing the matcha in at the first step and it does not whip up into the necessary texture.

Keep it cold!

If the mixtures – both coffee and matcha- seem to be deflating put it in the fridge for 5-10 minutes before spooning onto the coffee.

Vegan or Gluten-Free?

If you’re looking for a vegan, gluten-free version, follow the matcha recipe and substitute the egg whites with aquafaba (chickpea liquid) 1:1. Use dairy-alternative milk and enjoy!! Please note that it’s my understanding that instant coffees are made with gluten (which gives it its lift in this recipe!).

  • 0.67 cups snap peas, roughly chopped
  • 1 cups gin (2 oz per drink)
  • 5 oz tonic water, good quality
  • 1 lemon, for peeling

Instructions

  • For the snap pea infusion: Combine 2/3 cup roughly chopped snap peas with 1 cup gin. Let sit for one hour, stirring occasionally, then strain through cheesecloth or a nut milk bag. Store in freezer.
  • For the cocktail: Express the lemon peel by twisting it into a chilled, empty wine goblet. Run the peel around the edges of the glass and discard.
  • Add 2 oz gin to the goblet.
  • Gently pour the tonic water into the gin by tilting the glass and pouring it down the side.
  • Garnish with juniper berries or peppercorns, pea shoots or shiso, and edible flowers.
  • Optional: add a squeeze of lemon. Adding the garnishes and citrus last keeps the carbonation from dissipating.

Remove from heat and cover. Let stand overnight, then strain through a fine-mesh sieve and store in the fridge. Use .5 oz per cocktail.
  • For the Cocktail: Combine all ingredients in a cocktail shaker with three ice cubes. Shake for five seconds, then pour into a rocks glass filled with crushed ice. Add additional crushed ice and garnish with a pineapple flower or sprig of lavender (or both); serve with a straw.

  • For the Hibiscus Syrup: Add 1 tablespoon hibiscus tea (dried hibiscus leaves) to 1 cup of very hot water. Let stand for 5 minutes, then add 1 cup sugar and stir until combined. Let cool and store in the fridge. Use .5 oz per cocktail.
  • For the IPA Syrup: Add equal parts (ideally by weight – use a kitchen scale if you have one) IPA beer and sugar in a blender, then blend on high until combined. Store in fridge. Use .5 oz per cocktail.
  • For the Cocktail: Add vodka, elderflower liqueur, lemon juice, .5 oz hibiscus syrup, .5 oz IPA syrup, rosewater and eggg white to a shaker with one ice cube. Shake in an oval-like motion until the ice completely dissolves (when you don’t hear it rattling inside any more). Pour without a strainer into a large coupe. Garnish with edible flowers.

  • Splash a tiny bit of chartreuse into the bottom of a metal julep cup. Using your fingers, gently press the mint sprigs into the bottom and sides of the cup until you can smell the mint, then discard.
  • Fill the cup completely with crushed ice. Pour the bourbon evenly over the ice. Pour the remaining chartreuse over the bourbon-soaked ice.
  • Top with additional crushed ice, using your hands to pack a snow cone-like mound on top. Top lightly with powdered sugar and an herbal garnish, then serve with a straw.

Cocktails, 3 ways: Classic, Funky, Non-alcohol. All bets are off this holiday season, and I wanted to share with you a cocktail for any mood you may find yourself in. A classic Manhattan for when you need a drink. A coconut Margarita when you need a bit of funk (and my daughter would like me to name it, the Winter White Queen Elsa Margarita). And a non-alcoholic punch when you need something special without the booze.

There’s truly nothing like the holiday season to bring up an excuse to make a cocktail. And I happen to love glassware and barware especially this time of year. If I can find an excuse to make a drink, I certainly will! It can be fun to experiment, and it’s not as laborious as say, baking a cake. Plus, this year more than ever I can find myself craving a cocktail.

Why do these Cranberry Apple Martinis deserve a spot on your holiday cocktail line up?

They are simple to make! Seriously… no fancy simple syrups, liquors, or bitters. Just clean fruit juice and crisp vodka or gin. They take less than 5 minutes to whip together, just be sure to chill your glass!

Nothing says festive like cranberry. Something about fresh cranberries really pulls together a holiday cocktail ‘look’ that is so memorable.

If you turn to a ‘clean’ cocktail often, these are great. No added sugar, no hidden ingredients, just your favorite high-quality vodka or gin, and a bit of fruit juice.

Is a martini made with gin or vodka?

Both?! Just not at the same time… a classic martini is made with gin. Many people opt for vodka as Gin can be quite an acquired taste. It’s extremely herbal and… woodsy. While I think it works great for a festive cocktail like this, go with vodka if you want something a bit cleaner.

What’s a dirty martini?

A dirty martini is simply made with a splash of olive juice. That’s the ‘dirty’ aspect. Without it, a martini is quite pristine and clear.

Tips for a great martini:

Chill your glass.

As classy as it gets and this will make your drink taste that much crisper!

Strain your drink into the glass.

This will ensure an ultra-smooth texture.

Garnish.

Whether you go with olives for a classic look or cranberries for today’s festive variation. A little garnish goes a long way for this simple drink.

Go for quality.

A martini is heavy on the alcohol and the taste really shines through so go with a high-quality gin or vodka that you’d love to sip on.

Use helpful tools.

Apple Pie Moonshine

It’s the time year again where the nostalgia lies within the flavors of seasonal dishes and drinks. This Apple Pie Moonshine will combine all the fall favorites into one amazing drink!

Ingredients

  • 750 ml bottle of 190 proof Everclear
  • 1 Gallon of Apple Cider
  • 1 Quart Apple Juice
  • 3 cups Brown Sugar
  • 1 cups White Sugar
  • 10 Cinnamon Sticks
  • 1 Large Stock Pot
  • 6 Mason Jars (Quart-Sized)

Instructions

  • Prep the apple mixture batch and add as little or as much alcohol to the mixture that you’d like!
  • In a large stock pot, combine the apple cider, apple juice, cinnamon sticks and bring them all to a simmer.
  • Add the sugars to the pot and stir for 5 to 10 minutes, or until dissolved.
  • Remove the pot from the heat and let the pot cook for HOURS. The key is to NOT evaporate the alcohol content!
  • After the mixture has cooled, add three cups of Everclear to the mixture.
  • Divide the mixture across six mason jars and equally distribute the cinnamon sticks across the jars. Over time the cinnamon flavors will outweigh the alcohol.

This frozen papaya pineapple margarita recipe is the perfect tropical cocktail to cool off a hot summer night. These blended frozen margaritas are made with tropical papaya and pineapple fruits, pineapple juice, and tequila. One sip and you will instantly feel like you’re on vacation at a tropical island.

This frozen papaya pineapple margarita is so simple to make! Made with frozen papaya and pineapple chunks, tarty pineapple juice, and tequila all blended together for one simple, 5-minute cocktail.

You can use fresh or pre-frozen fruit. I love freezing fresh fruit at its peak season (see my tips below!). But you can also buy a bag of pre-frozen fruit if you’re short on time!

Go heavy on the garnish! I love punching up my garnish game for frozen cocktails. Tropical frozen recipes like this already make me feel like I’m on vacation so why not go the extra mile. Ingredients for Frozen Pineapple Papaya Margaritas:

  • pineapple
  • papaya
  • lime juice
  • pineapple juice
  • tequila
  • Cointreau or triple sec
  • agave nectar or simple syrup
  • ice

How to Cut a Papaya:

  1. To cut this papaya I’m using two different knives, one to dice and cut large pieces and the other to remove the skin. I’m using my Shun Classic Blonde Chef’s knife for larger cuts and a utility knife for trimming the skin on the sides of the papaya, they both cut like a dream and are my go-to for chopping fruits and vegetables.
  2. Cut the papaya lengthwise in half and scoop out the seeds to discard.
  3. Begin to cut the papaya skin with the smaller utility knife cutting the skin thinly away from the flesh in a downwards angle until all the skin is trimmed off.
  4. Cut the papaya into larger half-moons and then into 1-inch chunks.

How to Freeze Pineapple and Papaya:

I love taking advantage of fresh summer produce by cutting, preparing, and freezing fresh fruit for smoothies and frozen cocktails!

The best way to freeze pineapple and papaya chunks is to fruit cut into 1-inch pieces and place on a parchment-lined baking sheet.

Freeze the tray until the pineapple pieces are frozen solid. Transfer fruit to ziplock bags or containers and place them into the freezer.

How do you make these Frozen Pineapple Papaya Margaritas?

  1. Cut and freeze your papaya and pineapple: If you’re using fresh pineapple and papaya chunks be sure to freeze the fruit for at least four hours before making a cocktail.
  2. In a large blender add frozen pineapple and papaya, lime juice, pineapple juice, tequila, Cointreau, honey and ice.
  3. Blend on high until smooth and creamy, about 30-60 seconds.
  4. Serve in a large glass with a lime wheel, pineapple wedge, and pineapple leaf.

Nothing says summer like a fresh glass of lemonade. But add some watermelon to it, and now you’ve got yourself an amazing drink! We are soaking up summer as long as we can!

Follow along as I make a fresh batch of watermelon lemonade. I even got some fun watermelon-themed tools to help me out.

First, cut 1-2 small watermelons into a small cube using a serrated knife and watermelon slicer like this one from Chef’n. Just use the double-sided slicer to cut through the watermelon vertically and then go the other way to make small cubes. Save half of the watermelon for sliced garnish.

After that, place the watermelon into a blender and pulse until it’s all blended together! YUM!!! We love the Wolf blender in the kitchen because of the high-speed options and quick blending abilities.

Next, take watermelon and pour it through a strainer and reserve 2 cups of the watermelon juice, and set the leftover to the side.

In a large pitcher, mix together 2 cups of watermelon juice, and fill the rest with water or sparkling water! Add a half cup of sugar at a time. Add more or less depending on personal preference.

Instructions

As for getting a crispy color, that’s why the base is all neutrals! While you could absolutely use frozen mango or avocado to get a creamy base, it may muddle the color with the natural orange pigmentation. Think about smoothie building from a color wheel perspective!
